SCN Choc-Chia-Fudge Recipe


We all love Chia pudding, choc-chia pudding was my all time favourite... Until, following a very happy accident, I discovered SCN choc-chia-fudge!

This recipe is so simple, so versitile and so indulgent I feel like I should actually trademark it before releasing it out in to the world. It's really so amazing that EVERYONE must know that I came up with it!.. I must get credit!

But then the Buddhist-centred, nurturing, health care practitioner part of my brain takes over and I am filled with excitement at the thought of this indulgent treat being shared with the masses and us having yet another healthy and delicious treat to enjoy guilt-free.

So here it is.. my soon to be world - famous SCN Choc-Chia-Fudge recipe.

Ingredients:

  • 4 tablespoons of Chia Seeds

  • 1 tablespoon of organic Cocoa powder or raw Cacao

  • 1/4 cup of coconut cream - I recommend Ayams organic coconut cream

  • 1 teaspoon of Manuka honey

Directions:

  • Take chia seeds and cocoa/cacao and mix well in a bowl.

  • Once mixed, then add coconut cream and honey.

  • Place in the fridge and allow to sit for around 30mins to 1hour

Note: after 30minutes you will have a chocolatey, slightly crunchy, delicious mousse. After 1hour however, you will have a delicious, creamy, indulgent choc fudge. Choose your fridge time according to the consistency you would like to achieve.

Once you have your bowl of "fudge" you can then choose to do with it as you wish - top with some flaked almonds as above, or have with blueberries, walnuts and coconut yoghurt as below. Raspberries would be the most delicious choice in my opinion, when they return to earthly prices of course.

Remember, this is a healthy dessert - we have used only 1 teaspoon of honey so obviously this recipe will not turn out sweet. You can adapt this recipe to be more or less sweet by adjusting the honey. Don't like honey? Try maple syrup, coconut flower nectar or agave syrup.
