I love a gourmet breakfast! Here's a recipe that's so good, you'll be counting the minutes to bedtime just to wake up and eat it all over again.
Not just for breakfast though, this recipe works best at any time of day. Enjoy!
Pesto Scrambled Eggs with StirFry Greens
Ingredients (serves 1)
1 large handful of organic kale
1 handful of bukchoy, chopped
2 organic eggs
Handful of Pecans
Directions
Chop your greens and place in the pan with 1-2 Tbsp of your homemade "Super Pesto". Stir fry for 1minute before adding your eggs, scramble the eggs with the greens and pesto.
Take all but 3 of your pecans and grind. I used my magic bullet for this but you could use a food processor or even just chop them. Sprinkle 1 tbsp of your pecans over your pesto eggs and greens, place remaining pecans in a jar for other healthy recipes this week.
Serve your stirfry greens and scrambled pesto eggs topped with ground pecans and a couple of whole pecans on top.
