I love baking, and love experimenting with new ingredients and recipes. I often research what's out there before working on my own version, substituting ingredients for more nourishing, healthier ingredients where possible.
Something I find a little annoying at times however is having to sift through pages of information about the benefits of raw cacao/coconut oil etc before getting to the recipe. So today, here's a delicious recipe with no blurb, no marketing, no story - just an awesome recipe. Enjoy!
Note: I use organic stevia for my cakes but have included the measurements for coconut sugar in this recipe also.
Recipe makes 9 cupcakes (5 mins prep, 25-30mins baking time)
Ingredients
3 organic eggs
1 cup coconut cream
1 cup coconut sugar (or half a cup of organic granulated stevia)
1.25 cups quinoa flour
1 cup raw cacao
2 tsp vanilla bean extract
1 cup coconut oil
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp himalayan rock salt
Instructions
Preheat oven to 200 degrees Celcius.
Mix all dry ingredients together in a bowl.
Add wet ingredients and mix well.
Pour mixture into lined or greased muffin tray and place in the oven for 25-30 minutes (check occasionally as oven times will differ).
To test - place a knife into the centre of a cupcake and poke to the bottom. If the knife comes out clean when you remove then the cupcakes are ready.
