Introducing my latest creation: Laghetti: "spaghetti" made from stir fried ribbons of leek.

This dish is so delicious it could make even the fussiest unhealthy eater fall in love with greens.

Ingredients:

  • 1 cup of broccoli

  • 1 cup of mushrooms

  • 3 asparagus spears, snapped or chopped onto bite size pieces

  • 1 handful of basil

  • 1/2 a head of leek, torn in to ribbons

  • 2 organic eggs, beaten

  • 1 Tbsp extra virgin olive oil

  • Optional: 1Tbsp of goats cheese or a sprinkle of coconut butter

Directions:

  • Stir fry the greens in olive oil for 3-4 minutes.

  • Add in the eggs as you turn off the heat. Stir well so the egg cooks among the heated veggies

  • Serve with goat's cheese or a sprinkle of coconut butter and stir through.

Note:

  • For the meat eaters this would also work well with some chicken chopped through it.

  • For the lean and green plant based machines you can take out the eggs, double the broccoli and top up the fats further by stirring some coconut cream through while cooking.

Benefits:

  • This dish is rich in vegetarian #protein plus antioxidants and important minerals like iron and magnesium.

  • The greens and good fats are great for reducing inflammation.

  • The asparagus, broccoli and leek are fabulous for improving detoxification, digestion and can reduce sugar cravings significantly.
