This 5 ingredient, one pot, vegetarian shakshuka-style meal is a perfect alternative breakfast or quick and easy dinner.
Ready in minutes and no complicated ingredients, this is a healthy balanced meal that can be your go-to when you need something delicious, without breaking your cleanse.
Per Person Ingredients:
1 tin of crushed tomatoes or 2 cups of plain passata (tomatoes only, no additives, read the label to be sure)
2-3 cups of kale or baby spinach
2 organic eggs
1tbsp extra virgin olive oil
1 clove organic garlic
Super-Simple directions:
Blend tomato, garlic and oil until smooth.
Place over medium heat until starts to bubble, stir kale through at this time.
Crack 2 eggs carefully into the mixture. (I did a bad job of this but if you're really careful you'll poach the eggs in the liquid which is wonderful.)
Now it's time to enjoy. This is delicious served as-is, and even better served with crusty, buttered bread.
