High protein, high fibre, choc chip pancakes (Makes 7)

Choc chip, dairy free, buttermilk pancakes

Want pancakes without the guilt? Try these delicious, light and fluffy pancakes made from nutritious, healthy wholefood ingredients.

Ingredients:

  • 2 cups brown rice flour

  • 2 eggs

  • 8tsp coconut cream

  • 1 tsp balsamic

  • 1tbsp Olive oil

  • 2 scoops vivo protein powder

  • 2tsp flaxseed meal

  • 4 -5 cups water (until becomes liquid batter)

  • Half tsp Baking powder

  • 1-2 tbsp of dairy free choc chips - sugar free or stevia sweetened if possible.

  • Non-stick pan or spray olive oil for cooking.

  • Optional: 1tbsp of pistachio nuts, chopped or crushed.

Directions

  • Make vegan buttermilk by mixing coconut cream and balsamic vinegar. Set to one side for 1 minute while preparing mixture below.

  • Beat eggs, then add rice flour and all remaining ingredients, mix until forms a smooth batter, now add the vegan buttermilk.

  • Heat pan with a little spray oil for best results. Use a cup, or cup size baking measure, and scoop 1/2 a cup of batter into hot pan. Allow to cook on one side before flipping.

  • Stack your pancakes high. Dress with crushed pistachios, blueberries or a drizzle of coconut cream for the ultimate indulgence.

  • Don't forget to instagram the results.
