Baked fish parcels with hand cut chips and simple salad


This is a beautiful healthy meal that is sure to delight the whole family. With just a few ingredients, simple prep and semi-indulgent yet totally healthy. A beautiful mix of flavours, textures and colours with minimal effort.

Prep time: 5-10 minutes

Cooking time: 20 minutes

Serves: 2

Tastes: Delicious!!

Ingredients (serves 2, costs under $8 or under $5 if you're lucky with your fish):

  • 2x 100 g white fish such as Basa, Cod or Ling

  • Fresh Dill

  • 1/2 a lemon

  • 1-2 cloves garlic, crushed

  • Extra virgin olive oil

  • 2 cups potatoes sliced in to chip size

  • Salt and pepper

For salad:

  • 1 carrot, grated

  • 4 handfuls of green leaves

  • Dill

  • 1/2 a lemon

  • Olive oil

Directions Fish:

  • Preheat oven to 200°

  • Take 100 g fillets of fish and place each on foil, ideally lined with baking paper

  • Top with lemon juice, garlic, a drizzle of olive oil and pinch of salt and pepper.

  • Now sprinkle with lots of fresh dill, wrap into a parcel to allow to steam and then place in the oven.

  • Bake for 15-20 minutes or into cooked through. Serve to table in parcels for maximum effect.

Directions, chips:

  • Boil potato until soft in a large pan with water and a sprinkle of salt.

  • Once cooked, place in a fry pan with a light coating of olive oil and stir fry until crispy.

Directions, Salad:

  • Mix greens, grated carrot, and dill in a bowl.

  • Dress with juice of half a lemon plus a drizzle of olive oil.
